Prime and Providence: a night of Wagyu on 60th Street
Coal-fired steaks, an oyster bar, and a five-course Wagyu dinner on Nov. 10 at West Des Moines' big-night steakhouse.

Some restaurants are for a Tuesday. Prime and Providence is for the night you've been looking forward to all week. The West Des Moines steakhouse on South 60th Street cooks its steaks over coal, keeps a full oyster bar going, and lines its dining room with wine. It's polished without being stiff, and it earned its spot on our restaurant tier list.
The Ultimate Wagyu Experience, Nov. 10
On Tuesday, November 10, from 6 to 9pm, the kitchen is hosting a five-course dinner built around Japanese Wagyu, from the richness of Kobe to the rarity of Ozaki. It opens with a coal-roasted oyster topped with Kagoshima Wagyu and soy-miso butter. Then comes Kobe beef sashimi over crispy rice, a char-grilled Takamori Wagyu negimaki, and a Bushu-gyu udon surf and turf in shellfish-nori broth. It finishes with a coal-seared Ozaki striploin and yakiniku sauce. Every course comes with a drink pairing. Tickets are sold through Resy.
Wagyu any night
If you can't make the dinner, Wagyu is on the menu every night. The specialty list runs A5 striploins from Kobe, Omi, and Shimane, plus tasting flights like the Samurai Flight and the Emperor's Reserve. There are four caviars too, if you're going all in.
What to order
For the table, start with the triple-cooked bacon over mustard grits, the roasted bone marrow with brisket jam, or caviar and house kettle chips. The steaks run from an 8 oz filet to a 32 oz porterhouse, and you can add a lobster tail, Oscar, or au poivre. The sides are where it gets fun: crab creamed corn, the Lasagnatolo (a rolled Bolognese lasagna), and lobster mac and cheese. Save room for the white chocolate banana bread pudding or the coconut cake.
Good to know
Cocktail hour runs daily from 3 to 6pm in the lounge, with snacks like salmon wonton tacos and Blue Label sliders, $10 house cocktails, and oyster deals most days.
